A weekend away is exactly what the doctor ordered, and I’m the doctor! After the first couple of weeks back at work, my phone’s weather forecast was my saving grace, it showed nothing but sunshine for the next 3-4 days, and I knew exactly where I wanted to be, Inverloch with my family, and two rascal pups (Rumi and Yoda – Cavaliers) in tow.
With the early morning sun shining and the winds calm, it was the perfect opportunity to hit the beach for a stroll, I mean, who wouldn’t want to see two Cavaliers bounding around in the sand like they’re in a dog shampoo commercial? So, we leashed up our two furry friends and set off for an early morning walk, finishing with a stop at the local supermarket to stock up on food and wine for an afternoon on the patio, because what’s a weekend away without a little vino?
Our first afternoon snack involved a charcuterie board with a variety of meats, cheeses, and olives. We included Prosciutto, Melon, Ham, Mortadella, olives, Fetta, Brie, and crackers. The Prosciutto and Melon has always been a favorite of mine since the time my parents visited me in Italy, and I finally convinced them to try it, and let’s just say, it was love at first bite.
The second day was more like a dinner, as we didn’t start eating until around 6 pm, So, I took to the kitchen and cooked up a random chicken salad that turned out quite well. The salad included Butter Lettuce, olives, tomato, Fetta, Gherkins, avocado, and honey mustard dressing. The chicken was cooked with onion, honey, Dijon mustard, crushed garlic, and chicken stock, it was so good I had to remind myself not to lick the plate. And, of course, we paired each meal with some delicious Australian wine, because what’s a weekend away without a little vino, again?
